Kale is a powerhouse vegetable full of B vitamins, calcium, magnesium and fiber and it’s versatility in the kitchen is endless. The health benefits of kale range from being anti-inflammatory and an antioxidant to preventing cancers. Kale acts as a natural detoxifier for the body, it not only helps remove toxins from your body’s tissues but it further aids in clearing them out of your system.

Be sure to buy local and organic sources of kale whenever possible since the health benefits of kale are most potent after harvest and it is ranked among one of the worlds most heavily pesticide sprayed crops.

Give these crispy, nutrient-dense chips a try. It is a fun and easy way to prepare kale and they are irresistibly good.

1 Bunch of Kale - any variety will do

1-2 tablespoons Extra Virgin Olive Oil

Directions: Preheat oven to 350 degrees. Remove the center stalks and stems from the kale and tear it into pieces the size of a playing card. Arrange kale on two rimmed baking sheets being sure to give the kale enough space to get crispy. Drizzle kale pieces evenly with olive oil, season with salt and then toss to evenly coat. Bake until crisp, 7 to 10 minutes. Best if served immediately after cooking.
